This Weeks Delish!

I have to apologize for my lack of involvement on my blog this past week. I was on vacation with the family so I pre-scheduled the posts, but I wasn’t able to share them on any of the social media sites because I had not internet AND I forgot to write “This Weeks Delish” for last Saturday. I thought I had things organized before I left but I guess not haha oh well- forgive me? Well, I have a few very exciting things to share with you all. As I said, I just got back from a WEEK long vacation with the family! We went to Disneyland Paris for two nights, Bayeaux in Normandy, France for two nights, and Paris for three nights. And let me just tell you, by the end of the trip I felt like my Husband was going to have to roll me home… lol I ate about five decadent pastries a day while in Paris. AH-mazzzzzzing!!! I have never had such a culinary experience before. I just kept eating pastries, bread, and anything I could find with camembert. Totally unreal. I was able to visit some of my long dreamed about pastry stores such as Pierre Herme and Ladurée. I will be sharing more details on my trip this week- stay tuned!

These chocolate cupcakes are gluten free and made with a puréed quinoa mixture. I really want to make these- they sound so moist and delicious!

This Weeks Pick: I’m telling you- I know this combination sounds kind of off-putting, but this Baked Pineapple Casserole is so yummy! Pineapple chunks, sugar, shredded cheddar cheese, and a buttery ritz topping. You need to at least try this once in your life.
