This Weeks Delish!

I had a very interesting week filled with lots of ambition. A total 180° from the previous week when I accomplished little but breaking into season 4 of Alias on Netflix… Your probably wondering what has inspired me.

Well, I bought a book for my Kindle. I read while I run so when I finish a book I have this day where I am like in limbo and don’t know what I want to read and so I simply don’t want to run. I might be kind of using it as a scapegoat… but I can’t help myself! I refuse to run without some sort of entertainment, otherwise the time just drags on and becomes torturous. My point is, that I started a new book. By chance, while googling “rinsing soaked nuts” (as in almonds for my almond milk), I stumbled upon Kimberly Snyder’s Website. It didn’t take me long before I saw that she wrote a book. I went over to Amazon to see how it rated and ordered it up. I pretty much haven’t been able to put it down since. It has reignited the old nutrition student in me that I had buried with pounds of sugar and butter since college. It’s all about why it is important to eat natural foods made for your body and how to best consume them to produce the best results internally and externally- as in make your skin and hair beautiful!

Then, I went so far as to watch the free Hulu video “Forks Over Knifes“. WOW is all I can say about that. If you have the time, go watch it for yourself. It’s bound to make an impact. And as side-note… you should all prepare yourselves for some recipe changes here at The Sweet Spot. Things are about to get serious up in here.

But before we get too serious, lets look at some other fun I had this week-

I finally have herbs growing in my house! I’ve been wanting to grow herbs ever since I started cooking. It’s just so expensive and wasteful to buy those packets of fresh herbs at the store when you only need 1 tablespoon chopped thyme… And growing herbs inside is so easy! Especially when you cheat and buy them already grown like me haha but seriously, look at how much my basil is loving life! It even has tiny little white flowers. Ahhhh, my basil… we have a special kind of relationship.

Also please take note of the ducks that sometimes reside underneath my trampoline.

They don’t love me like my basil loves me. They run when they see me coming.

There they go. All 11 ducks that love to take up camp in my yard 5 times a day and all day when it rains…

Almost there! Climbing the hill, to their sanctuary of safety when I am outside- my neighbors yard. Because that hill is just too steep for me to trek… don’t worry ducks. I won’t come after you with my camera.

This is Guacamole Green Salsa- what a great alternative to your regular Mexican sauces!

Look at all that peanut butter oozing out of those cookies! YUMMY!

This Weeks Pick: This picture doesn’t do this recipe justice. I’m simply terribly at taking photos of pizza/pizza-like food. But trust me- it is SO good!! Homemade, chewy focaccia dough with herbed olive oil, mozzarella, sautéed spinach, and caramelized onions. Yummy, yummy, yummy!

Hi Laura =)
Your basil looks wonderful, but I just wanted to let you know that you don’t actually want to leave the flowering parts with the little pods on the basil. It means it’s going to seed, and will make the basil stop growing well. Cut back the basil below the flowers, and it will do even better!

Haha yeah I figured that meant something like that since I knew that was the case for other vegetables. But they are just so cute. I will cut it back today though since I don’t want it to stop growing. Thanks Kris!
