Dave had the whole morning off yesterday. He didn’t have to go in to work until 4pm. This was a win-win for me. I was able to see him all day and spend some quality time with him while Scarlett was at kindergarten. AND because he got home way late (like 2am-late), I got the OK to sleep with Scarlett in our bed : ) I love cuddling with my little cutie pie. I never, ever get the chance because Dave doesn’t like how disruptive she can make his sleep. You know how kids are when they sleep- kicking, punching, ending up with their foot in your armpit…I’ve even been head-butted on occasion.  I don’t know why he doesn’t like that haha. It doesn’t bother me much. I jump at the opportunity to cuddle with her since I don’t hardly get the chance.

Speaking of Scarlett, I’ve been trying to get her to start drinking green smoothies with me. She was doing pretty good for a while there. She would fight me to take control of my smoothie cup even. But lately she hasn’t been interested. I think that is because my smoothie making has been on the fritz lately. Just like everything else in my life right now. But this Peach Smoothie that I am sharing with you right here. She adored this Peach Smoothie.

And who could blame her? You definitely don’t notice this spinach. The peach flavor dominates the whole thing and the coconut milk pairs perfectly with it.

I suppose you could use almond milk instead of the coconut mik… but I really think that the coconut milk makes the smoothie in this case.

And if you don’t want to buy fresh peaches because you get erked when you end up with dull-flavored ones (like I do), go ahead and use 1/2 cup chopped, canned peaches (in their own juices!). That is what I did and I think it had even better flavor because of that.

Peachy Green Smoothie
Serves: 1
  • 1 cup coconut milk
  • 1 peach, chopped
  • 1 apple, cored and chopped
  • 1-1/2 cups tightly packed spinach
  1. Place all ingredients listed in blender.
  2. Blend until smooth, about 1 minute.
Add a few ice cubes if you like your smoothies really cold.
You can substitute the peach with ½ cup canned peaches in their own juice.

Does this recipe use coconut milk from the can or from the carton?
